Austin has sure grown up, especially the traffic. We started visiting in 2004 every 6 months to avoid the MN winters when I retired. In 2014 we made it a permanent thing. We did go to Katz's occasionally. Unfortunately it closed as you mentioned.

Locally in the Northeast part of town where the heaviest Jewish population is we have a Texas supermarket chain called HEB with a small cafe that actually serves up good Glatt Kosher deli, but unfortunately it doesn't have bagels or Bialys.
